Olive Oil Vodka Pasta

Method

• Cook the pasta as per the packet instructions.
• Heat a frying pan over medium heat with 1 tbsp of olive oil. Add the finely chopped shallot and minced garlic. Cook for 1 minute
• Add the tomato paste and vodka and mix to combine
• Add 1/2 the parmesan cheese and 250ml thickened cream. Stir until the cheese has melted and the cream is combined into the sauce
• Add the cooked and strained pasta. Mix together then serve in a large bowl
• Top with remaining parmesan cheese

Finish with a Drizzle

• Add the burrata, (tear it apart slightly) and add chilli flakes, parsley and finish with drizzle of olive oil for even more flavour and colour
