Chocolate Mousse with Olive Oil and Fruit

Method

• Melt the chocolate in 30-second bursts in the microwave
• Use a silicone spatula to mix the chocolate between burst in the microwave
• Add the olive oil and mix until it’s fully incorporated
• In a stand mixer beat cream until it forms soft peaks
• Fold the cream into the chocolate in 3 batches
• Pop into a container and place into the fridge to firm up

Finish with a Drizzle

• Serve with orange segments, figs and a drizzle of olive oil to cut through the richness and add extra freshness
